Depending on what your sorority's rules are regarding travel, you could try "Destination Unknown". Only the President and Social Chair (and advisors, of course) would know where the chapter is going -- just get dressed up, get on the chartered buses, and go!

Theatre de Masquerade (Masquerade ball)
Pimps & Hoes
Swing Dances
Mardis Gras
Black Rose Formal - You ask your date out by delivering them a black rose (same way as the symbol of death in Sicily - it was so gothic!)
Renaissance Fair-style dance

It's kind of trite, because it was in a movie, but I really liked the Prom theme in Never Been Kissed -- "Meant For Each Other - Famous Couples Throughout History"
