As far as I know, there is no prohibition on tattoos or jewelry in the Order of the Eastern Star. I cannot speak, however, for the customs and courtesies followed by Prince Hall-affiliated OES. If others can't see those tattoos, I wouldn't worry too much about it.
I would, however, keep the wear of earrings to a minimum and dress conservatively for any and all Order of the Eastern Star chapter meetings and initiations. There are still quite a few older ladies who are active members who frown on wearing anything but Sunday-best to chapter.
Within the Grand Chapter of Texas (where I am a member), tradition is that female members wear skirts or dresses and male members wear at least a collared shirt and tie.
