perfume, clothes, jewelry. how about a gift basket with a generous gift certificate surrounded by flowers, candy, and stuffed animals. ( i think my fantasy took over there. i personally would love that)

Hotel room complete with champagne, red rose petals in a jacuzzi, roses and a nice romantic dinner... Lots of candles.
My boyfriend did this for me last year and I absolutely loved it.

Something that actually shows that you thought long and hard about her -- not about what to get her. I mean - a guy can throw perfume, jewelry, and other trinkets at me all day long - but if he gives me something that shows he gets me, it's a much more memorable and appreciated gift.
Think about your lady friend and the kind of person that she is. Think about the things she's mentioned in conversation, the things that trouble her, the things that would make her life easier. Think of something that when you give it to her, she'll always think of you from that point forward.

Don't get her a humidifier. Trust me, girlfriends don't appreciate that.
Depending on how long you've known her, I think jewelry would be a safe bet (I say depending on how long you've known her because if you've known her a while, you'd obviously want to get something a little nicer). I don't know any girl who doesn't like jewelry. Or, if there's something she's mentioned that she'd like to have, get it--nothing's better than letting a girl know you listen when she talks!

I agree with the Jewlery suggestion. Can't go wrong with that ever in my book.

Jewelry always works, but stay away from whatever the hot item is...look in the side cases for the stuff not everyone has.
Whatever you get her, also burn a CD* that has songs that are either special to the both of you, or of a band she likes that are hard to find.
*You have no idea how hard it was not to say "make her a mix tape."

Ok, here's the low down....
I can't get her Jewelry because I've picked out some diamond earrings I want to get her for V-day ( which pops up sooner than you realize after Christmas). That said, I don't want to get her the same type of gift twice. The romantic champange/strawberries and rose petals type of stuff is what I'ma do for her Birthday. I've thought about all the others days but christmas......I thought it'd be so easy. I was thinking about getting her a golden retirever since she loves them so much. She's in love with mine ( his name is brinkley after the dog in you've got mail ). But I'm not sure if her apt lets her have dogs, plus I'd have to put down a deposit for it being in the apt which in florida usually runs you about 400-500$. The puppy itself will cost me 599$. I've also thought about getting her a bunch of gift certs to all of her favorites stores she likes to shop at, but that just seems too plain. I've also thought about getting her a pair Christian Dior shades to sport around in and a nice watch.
I'm really lost on what to get her and I feel bad. We've already picked out my gift. She's getting me an awesome bed set from bed bath and beyond, its a feather comfortor and some silk bed sheets that are off the chain.....none of which are cheap. That said, I feel like I need to get her something just as good if not better of a gift. She says she'll be happy with whatever I get her. I'm just so lost on what would be a good gift that wont be forgotten within a yr.

I've burnt her so many mixed sets that I've played at clubs/parties. She likes techno music just as much as I do if not more. She's actually trying to get me to take her to the Love Parade in Germany this up coming spring.

awwwwww, fuzzy puppy.  that sounds like too much though, especially if you're not sure about her apartment situation.
how about the Dior shades, the watch and a stuffed golden retriever for now? There are some stuffed ones that cost as much as the real thing.
You can practice by buying me the Rolex I want if it will make you feel more confident.
