having saturday mornings off from work doesnt happen too often for me. so i am having a celebration breakfast, since i dont get to eat breakfast at the proper breakfast time much anymore. i am making apple cinnamon pancakes and a glass of o.j. yay!!!

If I have the energy to get up early and make breakfast...
Usually...
Sauteed Mori-Nu Extra Firm tofu with Rosemary, Cilantro, No-salt spices and a tablespoon of Flax Seed Oil/Olive Oil/Garlic Oil mixture...
Add 1/4 cup of fresh, hot spicy salsa and place on simmer.
Garnish with either Tofurella or Veggie Slices of Mozerella/Cheddar and add Trader Joe's Tomato Splash and Victoria's Taco Sauce or Ortega's Lime Enchilada Sauce...
Make 1-2 Morningstar Farms Veggie Breakfast Sausage Patties
Bake 1 potate cake
And toast with Flax Seed Oil (tastes like butter to me...) or it works well with a biscuit...
To drink, I have Soy Chai Latte or Cran-Rasberry Juice or Water...

Alternates between two things:
[list=1][*]3 Eggs + 1 slice ham + 1 slice turkey[*]3 Eggs + Tuna![/list=1]
Cook the deli or tuna in with the eggs....it is a beautiful thing, but everyone thinks it looks like the grossest thing ever...SO good (I got the idea from a unique brunch spot)

Today was a vegetable omelet with cheese and salsa with potatoes, banana nut muffin and a pot of green tea!

Which kind of tuna do you use - would canned work?
It sounds kinda gross...but also sounds like a good protein breakfast - if I could use canned I'd try it.

The egg scramble thing is also really good with salmon - especially leftover salmon from the previous night's dinner. Yum!
It also works with canned salmon, so I would imagine that canned tuna would be okay too.
