I'm from NOLA, born and raised...anyway, I never hung out in the Quarter because well, that's what the tourist do...but I do have some great bars to go to that are Uptown...
1. Madigan's on South Carrollton Ave
2. Fat Harry's on St. Charles Avenue
3. The Boot on Broadway
4. F & M's
5. The Column's on St. Charles Avenue
6. Friar Tucks on Feret
7. Carrollton Station on Willow
8. Circle Bar at then end of St.Charles Ave on Lee Circle (little hole in the wall my friends and I found one night)
And of course, Cats is awesome for singing till the sun comes up! And don't forget about Liuzza's for good food and a cold beer. (

Also, if you want to do something fun go to Mid City Lanes' Rock & Bowl, my friend's family owns this place and it is awesome if there is a band there. And Mother's Restaurant
on Poydras has good poyboys. Anyway, that's my 2 cents.
