"Mitzvah" in this context refers to a good deed. Mitzvah Day is a day spent doing community service. You don't have to be Jewish to participate - you just have to want to help your community in some way. Candace decided not to participate - so she's "un-mitzvah-y".

I thought the comments from Candace and Jordan about not being Mitzvah-e was just inappropriate slang for not being "Jewish" enough for the sorority. 
I mean Candace is the genius that somehow got through four years of high school and up to her third year of college without taking a single class that addressed the differences between Judaism and Christianity. 
Is humanities not required at UCD?
