			Dump Cake
This is one of those easy things for which I always keep the ingredients on hand. It's ridiculously easy, and tastes wonderful!

1 box of yellow cake mix
 1 can of crushed pineapple
1 can of cherry pie filling (the one with more cherries is best)
 1 C. melted butter
 1 C. chopped pecans
1 C. coconut (optional; if used, cut back on the nuts)

Preheat oven to 350 degrees. In the bottom of a 9"X13" baking dish, mix the crushed pineapple & cherries until it's all red and fairly even. Evenly pour the DRY cake mix on top of this, covering all of the wet mixture. Sprinkle the pecans (and coconut) on top, then evenly drizzle the butter on top.

Put this whole concoction in the oven, and let it bake for 1 hour. It will be hotter than hades when you take it out, so it's best if you let it set for about 10 minutes. You can serve this with a scoop of vanilla ice cream, but it's almost too rich that way.

This is a great weekend breakfast treat:
Take a grapefruit and slice it in half. Place 1 tsp. of brown sugar on each half and place on a baking sheet. Place under the broiler for 5 minutes.

It's juicy and has a carmely crunch.

			Sloppy Jose
from "500 Low-Carb Recipes" by Dana Carpender

 1 pound ground beef
 1 cup salsa
 1 cup shredded cheese

Brown the beef. Add the salsa and cheese, and stir until the cheese melts.

If you're watching your carbs, you can eat this with a salad. If not, you can put it on a tortilla.

Haha - the best fudge recipe i can think of is on the back of the Fluff jar. Its amazing, and only takes like 5 minutes to make. We had it at a bake sale once and it went like CRAZY.

Another Sloppy Joe Recipe1 lb. ground beef (I usually substitute turkey though because it has less fat)
 1 small green pepper, diced
 1/2 ketchup
1 medium onion, chopped (I usually omit this because I hate onions)
 1/2 cup bottled BBQ sauce
 2 tbsp. sweet chunky relish
 salt and pepper to taste
 toasted hamburger buns

Cook beef in skillet until well browned. Add onion and green pepper, cook until vegetables are tender. Drain off fat. Stir in BBQ sauce, ketchup, relish, salt, and pepper into meat mixture. Simmer a few minutes, stirring often. Serve meat mixture over toasted buns.

 | Oh my goodness -- this is just like the grapefruit course at Chalet Suzzane in Lake Wales, FL! Ever been there? Here's their recipe:
 --------------------------------------------------------------------------------

 Broiled Grapefruit Recipe

 --------------------------------------------------------------------------------

 Yield: 2 servings

 Ingredients:
 1 grapefruit, at room temperature
 3 tablespoon butter
 1 teaspoon sugar
4 tablespoon cinnamon-sugar mixture (1 part cinnamon to 4 parts sugar)

 Instructions:
Slice grapefruit in half and cut membrane around center of fruit. Cut around each section half, close to membrane, so that the fruit is completely loosened from its shell. Fill the center of each half with 1 1/2 tablespoons butter. Sprinkle 1/2 teaspoon sugar over each half, then sprinkle each with 2 tablespoon cinnamon-sugar mixture. Place grapefruit on shallow baking pan and broil just long enough to brown tops and heat to bubbling hot. Remove from oven and serve hot.

1 medium onion chopped
1 small jar chopped mushrooms
1 tablespoon chili powder
1 can chicken broth
1/2 pound Spicy pork breakfast sausage

One of the ladies I work with is from the Philippines and she makes the BESTTTTTT eggrolls .... and she brought them in today so here enjoy!!

Philippine wrappers - 1 pkg
ground beef
shredded carrots
chopped celery
chopped water chestnuts
minced garlic
chopped onions
soy sauce - 2 tbsp.
black pepper 1 tbsp.

mix everything together in a bowl. seperate the wrappers, roll up and shape. depends on the size of the eggroll, if you want it thick put more meat and thin ... less meat. fry in hot oil!

Rudey, I've heard burning a candle on the same counter where you're cutting the onion works.
No idea if it actually does, but it's something to try if you're still having no luck.
