At Cal, a lot of people don't announce their Greek Status a lot of the time because of hostility from the "tolerant" liberals; so its hard to tell, but from my conversations these are what I know of, but there are probably many more:
My classes:
American Studies 110 - Globalization and Consumer Theory ~50 people
1 Theta Delta Chi
2 Alpha Phis
4 Kappas
1 Sigma Kappa
3 Kappa Sigs
1 Pi Lam
1 Phi Gamma Delta
German 101 - Advanced German Writing - 15 people
1 Theta Delta Chi
1 Sigma Omicron Pi
Film Studies 25A - Introduction to Silent Film and Film Theory - 60+ People
2 Theta Delta Chis
4 Pi Lambda Phis
1 Phi Delta Theta
3 Gamma Phi Betas
1 Pi Kappa Phi
German 100 - German Literature - 8 people
1 Theta Delta Chi
1 Sigma Omicron Pi
2 Beta Alpha Psi Business Fraternity
I already have my schedule for next semester, but my classes lean more to American Studies, so the Greek population will be much higher in those than they are in my German courses, except for German 160, (Fascism and Propaganda) which is cross-listed as a Political Science course which are usually packed with Greeks.
