Calling me beautiful is nice, but not when it's used to insult yourself. The last guy I dated kept telling me that I was "too good for him, too beautiful for him." It gets annoying after a while. Just leave it at "Wow. You're hott."
ETA: and to answer James' original question: always tell a beautiful woman she is beautiful. because if she knows it, she's going to flaunt it. and she needs you to validate what she knows.
