So true. The only big school's greek housing I've seen is UNL's and they have some huge and awesome looking houses. The pictures I've seen of MU's are really nice too. And I'm sure other big schools, especially schools in the south have really nice houses too.
However, at my school sororites don't have houses, we have a dorm where all the sororites have a floor. It all stems from back in the day when there was a law that if 6 women or more lived in a house it was considered a whorehouse. However supposedly that law has been removed and we're waiting until everyone has enough money to build hoses before anyone starts. For fraternities on my campus it really varies. There are two really nice new (in the last 3 years) "palaces", one new normal sized house, one big house that's a historical landmark, an old hotel, and then the rest are average sized older houses.
