Dump Cake
This is one of those easy things for which I always keep the ingredients on hand. It's ridiculously easy, and tastes wonderful!
1 box of yellow cake mix
1 can of crushed pineapple
1 can of cherry pie filling (the one with more cherries is best)
1 C. melted butter
1 C. chopped pecans
1 C. coconut (optional; if used, cut back on the nuts)
Preheat oven to 350 degrees. In the bottom of a 9"X13" baking dish, mix the crushed pineapple & cherries until it's all red and fairly even. Evenly pour the DRY cake mix on top of this, covering all of the wet mixture. Sprinkle the pecans (and coconut) on top, then evenly drizzle the butter on top.
Put this whole concoction in the oven, and let it bake for 1 hour. It will be hotter than hades when you take it out, so it's best if you let it set for about 10 minutes. You can serve this with a scoop of vanilla ice cream, but it's almost too rich that way.
