Easy Corn Chowder
Fry up three pieces of bacon in a medium sized sauce pan, and then use the drippings to saute a finely chopped onion and a finely chopped green pepper. Chop up a few pieces of bacon into fine bits and toss those into the mix. Set aside.
In a soup pot, combine 3 tbs melted margarine with 3 tbs flour. Combine over low heat. Add 1/4 gal. 2% milk. Stir out any clumps. Add your bacon and vegetable mixture, along with a bag of frozen corn (off the cob).
Bring to a slow boil, lower temperature and cover. Simmer for 15 minutes. Add salt and lots of pepper to taste. You may want to add more milk to keep the mixture from getting too thick.
