And then there's what to do with the left overs ......

From the Brown Hotel in Louisville comes "Hot Browns" ... my family has been serving them up for years - in fact I'd rather have the hot browns than the regular turkey dinner.

This is an open face "sandwich"

white bread toast layered with turkey, turkey gravey, cheese sause, topped with a strip of bacon (partially cooked). Grill under broiler until cheese sause bubbles and bacon finishes cooking..

As they say ... that's good eats...

Regarding leftovers

Let's not forget the famous Turkey Marsala - basically leftover lumps of turkey (you know what I'm talking about - when you get to a section that can't be neatly carved) sauteed in dry marsala wine with mushrooms.

Is there anyone else here who has ever heard of putting cooked fine egg noodles on top of their mashed potatoes instead of gravy? Mr. Adrienne's family does this - first time I saw it I thought they were playing a prank on me. I already warned the in-laws I'm bringing my own gravy this year.

Leave the turkey gravy out, add a thin slice of tomato, and you have Turkey Devonshire - one of my personal favorites!!
