Low Carb Lemon Pie

Ingredients:
Crust - 1.5 Cups finely chopped walnuts (almost powder, but not paste)
- 3 tbsp butter, softened
- 3 tbsp Splenda

Filling - 1/2 Ping (8 fl oz) heavy cream
- 1 pkg sugar-free Lemon Jell-o
- 3/4 C water
- 1 pkt splenda

Crust
Chop nuts. Get as find a grind as possible without turning them to butter.

Combine nuts and Splenda in a bowl. Add melted butter gradually and blend until you have a crumbly mixture that will hold its shape if pressed together.

Grease an 8" pie dish and pour in crust misture. Press firmly into the bottom and sides of the pan, coming up the side about 2". Bake in a 300F Degree preheated oven for about 10-15 minutes, untiil it just barely begins to brown. Remove from oven and cool.

Filling
Heat 3/4 C water in a small saucepan. When boiling, add the package of Jell-o. Stir to disolve completely, then take off heat. (Add the juice one fresh lemon if you desire - I did and I think it made it that much better)chill until the Jell-o liquid is colem but not starting to set (about 20 min)

Pour 3/4 C of heavy cream into a chillled bowl (the other 1/4 C will be whipped for a topping just before serving). Beat until very stiff peaks form. Add the chilled Jell-o liquid to the whipped cream. Beat just enough to fully mix. Pour the filling into the cooled pie crust and spread to form and even top. Chill for at least 3 hours.

Just before serving, beat the remaining 1/4 C of heavy cream, adding Splenda to taste (Only if you want - I did not find it "necessary)

I made this for the first time this morning and it was a hit with my husband. It is also wonderfull if you have no patience for "baking"

Taco Soup (more like a chili)

2 lb hamburger
2 c chopped onion
2 15 oz cans of pinto beans (drained)
1 15 oz kidney beans (drained)
1 can stewed tomatoe
1 can rotel tomatoe (any intesity of flavor)
1 can chopped tomatoe
2 small cans of chopped chilies
1 pack of taco seasoning
1 pack of ranch dressing mix

brown hamburger and onions then drain. Mix all ingrediants in a crock pot and cook on low for 6-8 hours. Serve with corn chips, sour cream, cheese, etc.

Stuff Sole:

For any spiniach lover ( Like me):

Sole or cod (**I even sometimes use salmon)
fresh chopped spinich or frozen
soda crackers
bacon( crumbled fried bacon or hormel bacon in a bag)
sauteed onions ( finely minced)
ricotta cheese

spread on flanks and roll it , place in baking casserole dish and drizzle with melted buter and bake at 350 for an hr

Is it alright to do with out Popeye food?

Green and I dont go well together?

God It sounds so good and the main thing is easy!

I call this green chicken...sounds gross, I know, but SOOOO good!

Green Chicken Curry

Sauce:
6 scallions
5 green chilies
2 cloves garlic
1 ½ teaspoon ginger
1 ½ teaspoon coriander
½ teaspoon black pepper
Basil
Cilantro
3 tablespoons extra virgin olive oil
Juice of 4 limes

Chicken:
4 boneless skinless breasts
14 oz coconut milk

Chop all sauce ingredients, then whiz in food processor to a smooth green past. Lightly coat chicken with sauce. Add a small amount of oil to a hot skillet. Fry over a hot fire for 4 minutes. Add the rest of the sauce and coconut milk. Simmer until chicken is done. Serve over rice.

Easy Peanut Butter Puppy Treats

I made homemade dog treats this weekend!

1 cup milk
1 cup peanut butter (creamy or chunky)
1 tablespoon baking powder
1 cup whole-wheat flour

Combine dry ingredients in a mixing bowl. In a separate bowl, combine milk and peanut butter (I actually combined them in the blender). Combine all ingredients together. Knead into dough.

Spread a handful of flour on a clean, dry, flat surface. Roll the dough out flat to 1/4 inch thickness. Cut dough into shapes.

Place shapes onto greased cookie sheet. Bake at 375 for 15-20 minutes or until brown. Allow to cool and store in an airtight container.

slo cook for 6 hrs awesome !

Super easy dessert...great for summer

This is a favorite in my family.

1/2 gallon vanilla ice cream--allowed to soften
two 3 oz. packets of instant vanilla pudding
2 cups of milk
60 Ritz crackers
1/2 cup butter--melted

Crush 60 crackers.
Reserve 1/2 cup of cracker crumbs.
Mix melted butter and remaining crumbs.
Press by hand butter/crumb mixture into a glass 13x9 dish.
In a large bowl, blend melted ice cream, dry pudding mix, and milk with mixer.
Pour ice cream mixture over crumb crust.
Sprinkle reserved crumbs over dessert.
Chill 6-8 hours.

Enjoy!
