Food Help
So the bf's birthday is this weekend and I thought it would be nice to cook him dinner on Saturday before we go to the DMB concert. But I'm going through my cookbook and nothing jumps out at me. I know you're not typically suppose to make something for the first time when you're having "guests" over but I need some fool proof/impressive dinner ideas that I can pull off.
Also we're going for a picnic on Sunday with some of his friends and I was put in charge of packing our basket...Ive never packed a picnic basket before so need some help on deciding what to take...
Any and all help would be MUCH appreciated!

Easy Pasta
Angel Hair Pasta with Garden Vegetables and Shrimp
Ingredients:
1 cup frozen shrimp (cooked, peeled)
1 cup broccoli (fresh or frozen)
4 to 5 ounces of refrigerated angel hair pasta
1 teaspoon olive oil
2 cloves of garlic, pressed
1 ripe tomato, seeds removed, chopped
2 tablespoons white wine (any type)
pinch freshly ground black pepper
pinch salt
2 teaspoons butter
2 teaspoons dried basil (or other dried herb of your choice)
Instructions:
1. Thaw shrimp in cool water for about 5 minutes; drain and set aside.
2. Chop fresh broccoli; rinse and drain well. Set aside. If using frozen broccoli, remove from package and set aside.
3. Cook pasta according to directions on package, drain, return to saucepan and cover; set aside.
4. Heat olive oil in 9 or 10-inch skillet over medium heat. Add garlic; cook for about 30 seconds. Add tomatoes; cook for about one minute.
5. Add broccoli, white wine, pepper, and salt; cook for 3 minutes. Toss in shrimp and cook until shrimp are hot.
6. Stir butter into the shrimp and vegetable mixture until melted.
7. In a medium-sized serving bowl, toss shrimp/vegetable mixture, cooked pasta, and dried herbs until coated. Serve immediately.

Pressed Picnic Sandwich
from Martha Stewart "Everyday Food"
1 loaf french bread, split and hollowed
1/2 12 oz. jar oil-packed roasted red peppers
1/2 pound deli sliced meat (ham, turkey, chicken, salami, etc...)
4 slices thinly sliced cheese (cheddar, provolone, havarti, etc...)
Spinach or lettuce, rinsed and dried
1) Brush cut sides of halved bread loaves with oil from jar of roasted peppers. Dividing evenly, layer bottom bread half with roasted peppers, deli meat, cheese, and spinch/lettuce. Top with remaining bread half.
2) Wrap sandwich tightly with plastic wrap and press between two cookie sheets; put heavy canned goods and let stand for one hour.
3) Refrigerate wrapped sandwich until ready to serve. To serve, cut into wedges.
