I ran IFC sports for a year. It is a total pain in the ass. It is just like running intramurals.
Each fraternity had one member that was their IFC sports rep. We would meet once a week for about an hour. Each fraternity was responsible for at least one sport. We would draw from a hat to see who was responsible for which sport.
Our sports were flag football, basketball, softball, street hockey, wrestling, soccer, x-country, bowling, tennis, racketball, water polo, volleyball, billards, golf, greek week and a few others that I don't remember. The fraternity responsible for each sport is responsible for referees and reserving the facilities. It is a total pain in the ass because sometimes you have to go through the AD to reserve the facilities and greeks are at the bottom.
Each week the reps would meet, turn in the results from the previous week and then you would set the brackets for the upcoming sports. The brackets were drawn from a hat. A vs. B, C vs D, E vs F and so on.
