pref night food
Ok, time for a frivolous post. . .
On several occasions, I have volunteered to make the desserts for Theta's pref night parties at (now) 2 nearby chapters. I just finished a project last week - a total of over 500 individual-sized desserts. I made round brownies with ganache piped on the top, Theta badge-shaped cookies (chocolate cookie for the black enamel and vanilla cookie for the white chevron), and mini cheesecakes with raspberry curd - they served one of each on a plate. They seemed to be a hit.
I was wondering what kinds of things you all serve at your pref parties. I'm always looking for new ideas to try. (I am a baking/confectionery hobbyist and love doing projects like this, when it can fit in my schedule/homelife. So, this is not a business for me - I donate my time, ingredients, etc.)

I think at recruitment, it's about presentation more than anything...
I'm very passionate about food, and obsess over the Food Network (yup, I'm a nerd) so I actually remember our pref food!
We had a sort of lemon-y pound cake with rasberry puree and whipped cream. All the girls loved it! They also always make a punch to serve with it. Of course, we serve it on very pretty little plates (they look crystal, but somehow I'm doubting that they actually are) with matching cups... it's looks very classy.

At my school food during formal fall recruitment is against the rules. However those rules are laxed when it's spring COB rush(which everyone does). We havent had homemade goodies like that, but we have had chicken wings(not the messy buffalo wings), veggie trays, and fruit trays with lemonade or punch. I didnt observe the spring rush this year so I dont know what they used this time around.

At my preference last year, I went to Theta at about 10 in the morning on a Saturday! So we had breakfast type foods - crossaints (sp?) and layered yogurt/fruit/granola parfaits. Very yummy.
This year the recruitment schedule was little different, so our preference parties were actually at night. We served cheesecake with strawberries and chocolate cake (two of each at each table, and you had to ask the pnm if she wanted to switch with you, so she got first choice!! - I was fortunate to talk to one girl who wanted cheesecake and one who wanted chocolate, so I got to have one of each!)

 We had cheesecake and a decadent brownie. Very tasty but many of the PNMs are too nervous to eat. And I think chocolate is a bad idea as it shows up in your teeth quicker than white cake or lemon cake, etc.

One food item that we had, not on Pref Night, was pretzels. We did it on Philanthropy Day and had one of those pretzel carts in our party-room. It went over well with the PNMs.

We had cheesecake. We had petifores (sp?) one yr, that were entirely too sugary and looked like pillows of frosting, they were too much. For non pref-night, the past few years our other food day was on our "Coke Day" (also philanthropy day) the girls served little 'hamburgers' made of Nilla Wafers, Peppermint Patties, coconut dyed green and red and yellow frosting for ketchup and mustard.

When I went to Pref this past fall, we were served cheesecake, either turtle or raspberry. They were delicious!

pref night food
For fall (formal) recruitment, my chapter serves petifore cakes on preference day. We get them from a local grocery store chain...They are fairly sweet, but are also not very big, so that helps. They are decorated cute with a pansy made of frosting on top of each. We used to serve them with gingerale, or a light punch of some sort, we have changed to just water in the last couple years...
We used to serve them in the spring as well, but the past two spring recruitments have been very informal and we haven't had a preference day...
