Anybody know how to make latkes? My bf wants to make some, and I'm trying to be supportive since he won't be able to go home for Hanukkah or Christmas but...I've never even EATEN latkes let alone cooked them!

Just about every family has "their" way to make latkes. As FSUZeta suggested-pick a search site, any one the many, and find one that looks interesting (a do-able) to you.
I would suggest a large cast iron pan and grapeseed oil.
I use cast iron for 99% of my day in-day out cooking and for latkes they work great.
And my fav pan in a 16" Lodge.

And your BF will love you for just trying to make them for him.

I would ask Beloved if he likes them plump or crispy, too. I've always had them crispy & almost lacy, but recently found out that some people like them plump. I'm sticking with crispy!
