Need T-Giving Recipes

OK, I am one of the older GC'ers, but believe it or not, this will be the first year I will have to do T-giving all by myself, since we can't go spend it with the fam in Dallas. Sooo, I'm looking for some new T-giving recipes! I have a great sweet potato pudding (w/brown sugar/pecan topping), and a good GB casserole...but need something new re. cranberries.... I also have no idea how to do Turkey (Furr's Cafeteria may get that call...).

Anyway, please help me out people...T-giving is my favorite holiday, and I want it to still be special, even though we can't go home. I would love some good Southern recipes and some desserts too. Thanks loads!

Andi,

As much as I'd love to help you, I've never done Thanksgiving dinner at our house before. I'm usually in charge of the GB casserole and a dessert when we go to my parents' house (usually chocolate mousse pie or blondie brownies). My aunt makes a squash casserole that is out of this world, though (and I don't even like squash)! If I can get her recipe, I'll send it your way.

Turkey is easy! As long as you have a pan and oven big enough for your bird, throw it in for 4-5 hours, baste as you go and you'll have a great Turkey. Stuffing is a little more complicated, but I think I have a recipe for that somewhere as well.

I'll PM you some good southern recipes that my family usually does for Thanksgiving

Dear fellow "older greekchater,"

I did my first Thanksgiving last year and it went fantastically well.

I have two great stuffing recipies. One with sausage and one with macadamia nuts and papaya (sounds gross but it was a hit). I also have a great cheesecake recipe as well. All pretty easy to make.

Other stuff, mashed potatoes, salad, green bean casserole, sweet potatoes, bisquits, etc I bet you already know how to make but if not, let me know.

Also, I got my turkey drunk as a skunk and marianted it in bourbon and it was amazing. That is another recipe as well I can send you.

Or tell you where to find them.

What I served last year was:

punch
white wine
red wine
crudite
spinach dip and chips

dinner:
turkey
salad
mashed potatoes
sweet potatoes
bisquits
green bean casserole
sausage stuffing
macadamia nut stuffing
cranberry sauce

desert:
coffee
tea
cheesecake
pumpkin pie
chocolate pecan pie
icecream

I have a recipe for "marbled potatoes". It's basically mashed white potatoes & mashed sweet potatoes put in the same casserole dish then swirled together. Has anyone tried that?

I'm just looking for different stuff--side dishes especially, starting with cranberries, and also I need a good asparagus recipe...then maybe some good desserts.

Carrie-I'd love to get that squash casserole! I make the cornbread-corn casserole from the Surfing Sisters cookbook too & its really good (ton's of butter, but oh-so-yummy).

Thanks for the allrecipes website--I actually prefer to get recipes from people who I know have personally tried them...I'm just not much of a tester-experimenter. I want to know that someone's whole family loves it before I serve it to mine.

aabby757-I do have the basics of side dishes down, but always looking for new fun things. I'd love to hear about getting your turkey drunk as a skunk...and your sausage stuffing recipe (my DH thinks stove top is the best, but I'm determined to break him of that!).

Honeychile-so, does your marbled mashed potatoes come out tasting sweet or salty? It sounds interesting!

Obviously, I'm going to have to cut back on the desserts this year--as there will only be 4 of us instead of 24 (I'm already getting depressed about that!).

Andi--

If you're concerned about roasting a turkey, I would check out the grocery store. No, don't get them to make it for you, but in the plastic wrap aisle you can find "oven roaster bags". If you cook your turkey inside one of those, it's practically guaranteed to come out very tender and juicy. It also cooks a little bit faster.

Instructions are right on the bag box and I swear, you can't go wrong.

As for asparagus--I'm a purist. Steam it til al dente and whip up some hollandaise sauce on the side. (Knorr's has a good mix version if you're shy about doing it from scratch.)

Good luck--I promise the first turkey dinner at home is the worst. You'll get the hang of it!

Great recipe for Cranberries!!!

Open can, let jellied cranberries slide into dish. Leave molded in shape of can and serve. People will love them

Sorry, I just can't do it. Thats the running joke in our family--my grandmother (RIP) could not cook to save her life--this was her contribution to T-giving every year. SInce her death, we have all sworn never to eat another can of cranberry gel-stuff!

I found a great cranberry chutney at Chi Omega Christmas a couple of years ago, but can't for the life of me remember who the vendor was. Oh well...the search continues....

In all seriousness,

If you buy a bag of the oceanspray cranberries, there is a really good recipe on the side of the bag. Also, I have found if you sub organic sugar for the regular sugar, it tastes a lot better. Try adding mandarin oranges or spiced apples to the cranberries as well. Good luck...

my mom makes the greatest cranberries for t-giving!!! They're made with gran marnier (nothing like drunk fruit!) i'll ask her for the recipie!

you could do cranberry stuffing. My aunt did that one year, I know it sounds kind of gross but it was really tasty! I'll have to see if I can dig up that recipe....
