YES they work.
This is very similar to a very-well known "placement" service company's approach (actually, it's more than one company)...but anyways, you're getting to do for free what I paid $2000 to do way back in 1993 - it's $5000 for their program now.
What you do is find that "dream job" you are looking for (write it all down on paper), and then start sending resume's and cover letters to people you know - the cover letter should refer to "I'm not specifically looking for employment with your company, just some information" or similar statements - and CALL to follow up.
The main purpose of the interview is to help fine tune your dream job to jive with reality, AND, to find out who these people know in other companies and industries that might have more specific information about what you want to do. Eventually, this leads to basically creating your own job with a company that mirrors what you want to do.
It works, but it is very time consuming, but well worth it if you can do it.
