I have heard that the reason why we say "Bless You" is because each time a person sneezes, their heart stops for a second. So, IMO it's said in case your heart stops.

My 9th grade Civics teacher told us that we say "God Bless You" because people in Medieval Europe believed that your soul escaped through your nose when you sneezed. They thought that saying "God Bless You" would make your soul go back into your body. Go figure

I learned something similar.

I was taught that it had to to with the Bubonic plague. Whenever someone sneezed, people said "Bless you" because the sneezed may have signified the onset of the plague.
