There are number of things that you might be able to do. I am actually just getting ready to run to a PC meeting....so I will just type a few then hopefully get back later this afternoon.
Have you NPC chapters celebrate their alumnae by recognizing the top 100 alumnae from those groups. (Have chapters nominate individuals and write a blurb..you could break it down to be even between all chapters to get a good representative)
Have an event with alumnae in the area, or alumnae panhellenic (if you have one in your city)...maybe a birthday party.
Establish a Panhellenic Scholarship through and endowment (would take time and lots of money) for a sorority woman (or women).
You could always donate something to campus, a clock, a fountain, a bench, landscaping, refurbishing of a room, library books on women's issues, or even fraternity and sorority issues.
OR how about collecting money or goods for the Women's Resource Center on your campus (if you have one) you could see what items they may need (books, supplies, videos, posters, maybe even co-sponsor a speaker) and fund raise or donate to make these things happen in the name of the NPC chapters on your campus and NPC's 100th.
One thing our panhellenic is doing here on campus is publishing a regular newsletter noting alumnae that have contributed to their chapter or the whole community...with a little story on each one.

Also, I know that NPC sent out a list of possible events in their Fall mailing...I think it was fall...so you might want to ask your panhellenic pres, or advisor to see if they have it...if not maybe contact NPC and make sure you get it. I know there is a nice poster that they gave, and you can also buy other materials...but they are rather expensive.
