Im a freshman so I've yet to experience Greek Week, but I know it is kicked off with Greek Sing. The sororities here do a dance routine WITH the fraternities (they normally make their pledges do it). I am definitely doing it. The theme for the whole Greek Sing is "An Era in Time" so my chpater has chosen its theme and I cant let anyone know it yet...you never know who's reading. LOL
Then we have games throughout the week and you collect poitns for various activities. Everything you do, you do as a fraternity/sorority team
