if you've had it long enough, you can tell right away if somethings wrong. My favorite test is if it smells fishy, then it's bad
The color and smell haven't failed me yet, but I'm careful about the raw food i eat.
It's hard to find really good (and cheap) sushi places outside of a big city. I had an awesome place back in Boston, made the best and tightest rolls, yummy.
