Rhapsody in Blue - George Gerschwin
This really isn't about New York, but I associate it with the City. Especially after the way that Woody Allen used it in Manhattan.

The entire album of Kind of Blue by Miles Davis was recorded in the City in two days. It wasn't about New York, but it is so very New York. It represented the era when Jazz came of age, and it came of age in only one place: Manhattan.
