If the school was too stupid to check things like this out, he shouldn't be the one to resign if it's an issue of "the school looking bad" - it should be the one who gave him the approval to start. Like Whirlwind said, he wasn't an employee yet when this happened. If they had an issue with it, they should have rescinded the offer.
I don't think the Greek advisor should be lecturing about not drinking, anyway...that isn't his job. The sororities are the ones who make the alcohol-free mixer rules, not the school or any employees of the school. And from what I gather, alcohol consumption in the fraternity houses is OK there, unless the fraternity's national forbids it.
