The house I grew up in had a gas stove. I miss it.

Our choices here are (a) electric, or (b) have propane delivered.
With electric, you have to plan ahead. Say your recipe says "bring to a boil, then lower the heat and simmer" - you have to plan ahead and have one burner set to high (for bringing to the boil) and another set to low (for simmering). With gas, you just turn a knob. Also, if you have electric and you lose power, you're SOL.
I have one of the flat-top electric stoves that jharb describes. On the plus side, cleaning is a snap...
