I know that for Empire he was like "yeah we added this guys names during the credits because we forgot to last time". (They forgot to add Ian McDiarmand (how ever you spell the last name) name to the credits for playing Palpatine).

The only difference that I noticed in
A New Hope was the conversation between Han Solo and Jaba the Hut. I didn't notice anything new in
The Empire Strikes Back. Did anyone catch anything else?
