I think you are approaching this in the right way. My chapter had a very active Bible study, but the greek community did not (though many chapters did have Bible studies and many Greeks were active in Baptist Student Union, RUF, and other religious organizations). We always used a book and went through it, but it is difficult if you don't have a core group of members because then hen someone attends they feel like they are behind or out of the loop. But if you used a book (or a couple of books) and made copies each week of the section that might help make it more open to anyone. I think some of the topics that have been mentioned are great, but I believe that any Biblical topics are fine...they don't have to always directly relate to Greek life...
