The semester that I took gross anatomy, it was tough to eat meat of any kind. Most of my classmates also stopped eating meat, especially roast beef and corned beef. I got over it as soon as I didn't have to go to lab every day though.
I think different people have different body types and metabolisms and therefore respond differently to different types of diet. My dad (who has a chronic heart condition) went on Atkins a couple months ago. He has lost 11 pounds, his LDL cholesterol went down, his HDL cholesterol went up and his triglycerides are lower than they've ever been. His cardiologist was pleased and surprised and said that he will be anxious to see what future research shows in regards to this. This is what Atkins said would happen, but the jury is definitely still out and I know people who had a lot of kidney problems after following a low carb diet.
