We have a sweetheart program for our sorority. The guys we nominate and select have gotten really into it. Our last one would come to our first informal recruitment event and introduce himself. He brought goodies to meetings and other events and on holidays. He knew everyone's name, b-day and even got to know some of the alumnae. The night before retreat, he would go over to where the new members were having their sleepover and bring them dinner while they studied.
Helping with rush was a big one. If say during informal recruitment you have a girl walk up to your booth with her bf and the bf is interested in a fraternity, you can quietly recommend your fraternity. Don't blow it out of proportion and tell him he has to join. Just say, hey, if you are interested, I know of some really cool guys in ABC fraternity. Check them out.
Also, you can help plan fun events, like BBQs and grab-a-dates and whatnot.
It just depends what you want to put into it.
