As far as I know, Jesse Palmer never joined a fraternity at UF. I'm pretty sure we would have heard if he had. Football players definitely have celebrity status at UF - it was pretty common knowledge if any house had guys on the team.
Some players were known for "hanging out" at certain houses, never joining, but were friends with the brothers. The players don't always have time to really dedicate to a fraternity. This way the player still got to enjoy some of the social aspects of being Greek and the house got the bonus of being "cool" enough to have football players hang out with them. I don't remember hearing Jesse doing this though.
