I know different sororities have different "firsts" (for example I believe GPhiB was the first GLO to use "sorority") but how is Theta the nationa's first sorority?

This is misrepresented all the time, especially by non-Greek writers. Theta was the first
Greek-letter fraternity for women (the first women's org to be founded from its very beginning as a Greek-letter fraternity). Kappa Kappa Gamma was founded just a few months later.
A few of the existing NPC groups (Alpha Delta Pi, Phi Mu, and Pi Beta Phi off the top of my head) were formed earlier as secret/literary societies and adopted Greek letter names later in their histories.
