Hmmm. I do drink tap water with lemon (to kill the taste), but I never though about as a fasting aid.
The last time I fasted, I did "Daniel's Fast" in the Bible which consisted of water and vegetables.
After fasting, I though about continuing to do it, but I would add lean protein and fish to it. Talk about no carbs!
I think you should be ok with what you're doing, especially since you are not doing a COMPLETE fast (no food or water). Honestly, your fast sounds no different from any sensible meal plan.
Breakfast - Fruit
Lunch - Sensible meal
Dinner - Sensible meal
Drink lots of water!!
