Gosh, I've been cooking since I was old enough to hold a spoon! I made my first full dinner at the age of seven, and have made Christmas dinner ever since I was about 18. One of the family jokes was when I took my first home ec class, and the teacher asked if anyone knew how to make macaroni & cheese. She called on me, and I said, "It's easy. You start with a white sauce, then gradually stir in the cheese..." She sent a note home with me, commending my mama for teaching me how to make a white sauce at 8!

Anyhow, I found this recipe & I'm going to try it for Thursday:

Party Potatoes
These can be made the day before & refrigerated, then baked the next day!

Ingredients:
9 large potatoes
8 ounces cream cheese
1 cup sour cream
2 teaspoons onion salt
1 teaspoon salt
1/4 teaspoon ground black pepper
2 tablespoons butter

Directions:
1) Preheat oven to 350º. Grease a 2-quart casserole dish, and set aside.
2) Bring a large pot of lightly salted water to a boil. Cook potatoes in boiling water until tender; drain, and transfer to a large mixing bowl. Mash until smooth. Stir in the rest of the ingredients except the butter. Beat until light and fluffy. Transfer to the prepared casserole dish, and dot with pieces of butter.
3) Bake for 30 minutes in the preheated oven, or until heated through.

Serves 8.
