ooooo....
The smell of chitterlings raw, cooking, whatever...

But to add my 1/2 cent to the issue:

YESSSS!!! For the sake of your guests Make sure they are clean. You may wanna have a test drive day where you try a batch on your closest friend/family member...
As a child I was witness to a VERY smelly mess one Friday night before the family reunion... ewwwww
An older cousin had her way in the kitchen with some chit'lins and, well, *ahem* they could have been A LOT cleaner.
Ewwww....Needless to say dinner, didn't go over too well. And here and now, about 12 years later, it's STILL a family joke.
What a stanky mess...
