I've done the Atkins diet, and still sorta-kinda watch my carbs.
Splenda is the best - tastes just like sugar. I take it in my morning coffee - my husband won't touch the stuff because he got used to the aftertaste of Sweet n' Low
I never could stand the Atkins breads - too much of a soy taste.
Cheese is a good snack, but don't eat too much of it. I've heard pork rinds are good too, but I don't eat pork so I don't know for sure.
One very important thing to do on the Atkins diet (or off it) is to drink your water - at least 8 8-oz glasses a day.
