Vegan living can be tough for the fitness oriented because it usually has lower protein and fat and more carbs.
Honestly, Carbs make you fat. But take 5 minutes every day and write down what you eat, what time you eat it, the calorie breakdown and the amount of protein/fat/carbs. That will put you way ahead of the game.
Also try and include how many hours sleep a night and any training.
