My older sister was in a sorority at Vanderbilt, so I'll do my best to answer your questions from what I remember about her experience, but she's much older than me.. so just keep that in mind.
From what I remember when visiting her, her sorority was diverse. In fact, her little sister was asian, so I do not think that will necessarily hinder you during recruitment.
Rush at Vanderbilt occurs in January, with one info part during the first semester. You will be assigned a Rho Chi during the first semester. Make sure you ask your Rho Chi any questions that come up. Rush at Vanderbilt is rather competitive, be sure to try to get a rec to every organization. Also, since you have defered rush, you will have a chance to get to know sisters first semester, and they will have the chance to see you before you go through rush. Usually being involved in other campus organizations makes them look favorably upon you, bacuse they know that you'll be an involved member. Also, as shallow as this may sound, don't do anything too stupid first semester..... everyone makes some mistakes when they first get to college, but your reputation is made the first several months, and you want it to be a good one when you go through rush.
About the campus in general. Vanderbilt is broken into two parts. Peabody college is farther from the center of campus than any other part of the campus, however, I don't think that Freshmen are required to live on that side of campus. Actually, My sister lived right across from the Beta house her freshmen year (right near the colesium). Sophomores who are not placed high in the housing lottery usually get the dorms near Peabody. I'm not sure if you can request those dorms, so you are closer to your classes, as a freshmen. The walk is still probably only 15 minutes from those dorms to Greek Housing..... tops! My sister didn't have a problem with it when she lived over there her sophomore year. If you have any more questions, just let me know..
