I'd have to say that it is most unwise to call yourself Zeta - anything yet, for the main reason that you don't really know who reads GreekChat. What if someone from your university reads the Zeta board, figures out who you are by your disclosures, and takes issue with your using the name? Yes, we're happy that you're interested in our illustrious organization, but you're not a Zeta yet, and shouldn't refer to yourself in those terms.
Good luck with your process, and I do hope you'll get to legitimately call yourself a "Zeta Pryncess" very soon.
