I saw several probates in my time and while I'm not an NPHC member here's what I've noticed:
-usually if you know their line number people will come with a balloon in the color of their org (for example if your friend was #1 on her line and in AKA you could get her a pink or green #1 balloon)
-generally if her chapter is generous they'll be stocking her up with greek paraphernalia as presents for her crossing. But if you can find a reputable apparel shop and see something she might like, you can get it for her.
