I'm a DPhiE from up North, although I'm originally from Florida and know some of the DPhiE's at UF, plus lots of my friends at UF are in sororities.
From what I understand, DPhiE is a very well respected sorority at UF.. in the past few years, I believe they have been number one, or close to it in terms of GPA and they are very active on campus.
It is true that they, along with AEPhi are known as the "Jewish sororities" at UF, although you can find members of other religions represented. As a side note, one of the fraternities they mix with often, Phi Tau, is generally known as a Jewish fraternity. However, about 5 guys from my high school joined and they are very much Christian and have had no problems fitting in.
I do know that the Delta Kappa chapter at UF does have women that are not Jewish. It's all about going where you feel comfortable, and if you feel comfortable at DPhiE, then they will welcome you with open arms, regardless of what religion you are.
Another side note, my chapter was predominately Jewish until my pledge class came in, so it can vary year by year as well.
