I agree with Jen, actually. You could plan on spending one whole evening with each chapter, so you don't get stuck like I did. However, if one gets boring, maybe you could still catch up with the other. I think the key there is flexibility. You shouldn't have to spend 2or 3 or more hours with a chapter if one hour has made you realized it may not be right after all. That is a long time and longer than any party for formal recruitment. It's good though, because if you like the chapter, you can spend a lot of time and really get to know them better before any commitments are necessary!
Now, on your last question, there is some bit of truth in that. I know from the other side of rush that if I saw a girl there one night, but not the next I (and my chapter) would figure she lost interest. If you feel comfortable, or that it is necessary, at the end of the night, make it clear to the recruitment chair, or whoever you've been chatting with in the chapter, that you really like them, but are unable to make it the next night. You don't have to tell them why, you could even say you have a night class or whatever. But, being honest is good. They'll know you like them and not to give up on you and they can tell you what their procedure is. perhaps the girl you've been talking to will meet you for lunch the next day instead. Or at least they can keep your phone number and call you for preference or whatever. Praisedancer, I can't speak for all chapters everywhere, but I think talking with them about the fact that you are unable to make it the next night is really the best bet.
