I would tell your rec writers to mail the rec by July 1, if possible. I live in Missouri, and while recs can certainly arrive later, this is a good time frame for them to arrive in Columbia. 2 - 3 per house will be fine.
And yes, please note: you are not the one who mails the letters. The alumna will do this. REad the stickies on recs - ways to ask, write thank you's, things to give your rec writer, etc. There is good info on this site. Read, read, read.
