Black pudding (I used Sausage because it's a little more commonly descriptive of what it is). It's basically a sausage of congealed blood and filler (in Britain it's commonly oats). More here (maybe not great if you have a sensitive stomach or you're eating). It's one of those "Gross, but tasty!" things.
