Coq Au Vin
I am HUGE fan of Coq Au Vin in the crock pot.
Marinate chicken overnight in cheap red wine or whatever you have left over. Nothing fancy here.
The next morning, add mushrooms, carrots, 3 tablespoons butter, 4 slices of bacon or prescuito and 3 tablespoons flour. Cook on low for 8 hours.
Serve plain or over noodles or rice.
