Here's an easy recipe for roast chicken. You can get a vertical roaster at stores like Lechter's - it's a drip pan with 2 metal W-shaped wires. You slot the W's into the drip pan so that they intersect. If you can't get a vertical roaster you can use a mason jar on top of a cookie sheet or broiling pan. On top of this, you place a chicken, legs pointing down, seasoned with whatever you want (pepper, rosemary, oregano, etc.) Place in a 450 degree oven, 15 minutes per pound. It bastes itself and the fat drips right off.
