What about actually saying to the person you're talking to "I'm sorry, I'm a little nervous about recruitment" and then smiling and having something else ready: "Your house is really beautiful - I bet the girls who live here have so much fun getting ready to go out together" or "How do you come up with the song parodies you do for Greek Week?"
Have some questions ready, even if you have to write them out and memorize them beforehand (look around GC for the thread on what NOT to talk about - which basically boils down to boys, booze and bragging about bucks).
And here's a hint from someone who interviews people for a living: avoid questions that have one-word answers: "How many girls live here?" "Is your house doing Anchor Splash?" - instead, go with things that require explanation: "Those formal pictures in the scrapbook were gorgeous. Where do you hold your formals?" "Jen mentioned in her welcome that she's in charge of chapter PR. What does that involve?" (Although, if you freeze up, a Y/N or one-word-answer question is better than nothing - at least it will give the recruiter something to work with: "Do you have movie nights?" "Who put the scrapbook together?")
It's okay to be nervous - just be prepared, smile, and stay positive.
