I didn't do any internships when I was in school, and it did not impact my ability to get good job offers after college, but I think that in today's climate it is critical to have them.
I work as a internal Performance Consultant and Trainer. I do training on things like leaderhip, team building, communication skills etc. and consult with departments in my company to help them meet their performance goals. My recommendations include both training and non-training interventions. I don't think my degree has helped me an awful lot in my professional career, as a matter of fact, if I had to do it all over again I would NOT major in Econ. Hated it!!
