All Mexican food from any part of Mexico is authentic in my book and is so much more interesting that what I call Tex-Mex. I love going to Ranch Market in Phoenix which is the hispanic market. They have a great food counter where you can get everything (including organ meats.) The best foods come from little mom and pop shops, not the big restaurants.
I had to lol @ "the Mexican food from Mexicans." I had to read through your post to really understand what you meant. haha. Yeah, the little hole-in-the-wall, made by the old grandmas are the best. It's the same here, the more "big name" restaurants usually aren't that great.

Yeah all the Tex-Mex staples--chimichangas, fajitas, nachos, burritos, sopaipillas, etc--will always be super popular, I don't think there is anyway to get around that. And Mexican food in Texas isn't all that great a lot of the time either--you just have to turn on your TV and see the crap food they find in TX (ummm enchiladas w/ chili bean sauce....ewwww).

I HATE it when people say "well of course El Paso doesn't have Chipotle. People will realize REAL quick that it's not authentic Mexican food." Yeah well, neither is Taco Bell, but I don't see it going out of business.

ETA: your "mexican food made by Mexicans" made me realize how I loove Chinese food, except for the food made by my Chinese roommate and her friends. I didn't understand why, I would figure the "real" Chinese food would be better, until one day I went to the Chinese owned restaurant we have here (like owned and operated from people straight off the boat). When I walked past the kitchen I spied several Mexican cooks. From then on I kept saying that the good Chinese food was the one " made by real Mexicans" lol.
